Chicken Quinoa Salad
1 1/2 cups of quinoa washed
3 cups water
1 tsp of tumeric
1/2 tsp coriander powder
dash of chili powder
Cook quinoa in rice cooker.
Meanwhile prepare fresh ingredients.
2 crimini mushrooms, washed and chopped
1/3 cup cucumber
1/3 cup red, yellow or orange bell peppers
1/4 cup sweet onions
1/4 cup of evoo
2 Tbs of balsamic vinegar
1/2 cup chicken, cooked and cubed
S/P to taste
squeeze of fresh lemon, optional
cilantro leaves, chopped, optional
toasted almond slices, garnish right before serving.
